Vegetable Quinoa Soup (Gluten Free)

Soup is one of the easiest meals to prepare considering you just chop up all of the ingredients and throw them into a pot. Soup also tends to be lower in calorie (when you make it the right way) and very satisfying to your stomach. 
When you're making soup and  using a stock, try to use low-sodium or no salt added products. Soup can be a very healthy dish, but conventional broths can rack up your daily sodium intake in less than a cup of liquid. Not to mention: bloating. Now that is just not sexy ladies and gentlemen. 
This particular recipe is packed with protein from the quinoa and legumes, along with plentiful amounts of vitamin C and K from the celery and cauliflower. 

Ingredients: 
2 c raw beans (cannelini, pinto, black, lentil)
1 c raw quinoa
2 quarts of low-sodium chicken broth
1 quart water
1 can diced tomatoes
2 tsp garlic powder
2 tbsp chili seasoning
1 c chopped celery
1 chopped onion
1 c chopped cauliflower

Directions 
Put all ingredients in a slow-cooker. Cook on low for at least 8 hours. Serve with some cheese or avocado!
