Turkey Chili

Picture
Now that it's starting to get colder here in Buffalo, I find myself clinging to anything warm, and that includes soups! This recipe is very easy to make, high in protein, but is also low in salt content, contrary to other conventional recipes.

Ingredients
1 lb lean ground turkey
1 can organic corn
1 can organic pinto/black beans
2 cans diced tomatoes (I used one fire-roasted, one regular for extra flavor)
1 onion chopped
1 bell pepper chopped
2 cloves garlic minced
2 tsp cajun seasoning
1 tsp chili powder
1/2 tsp pepper

Directions
Put all ingredients in a slow cooker and cook on low for ten hours. You may also want to add more chili powder if you like it spicier.

Note: I would also pour the chili into single-serve containers, and put them in the freezer.
