Sugar-Free Cranberry Applesauce (Paleo/GF/Raw/Vegan)
This recipe has a certain holiday flare to my original applesauce recipe. Cranberry sauce is a staple at most holiday tables, but they are usually riddled with refined sugars. This version has NO added sugar and is completely all-natural. So, ladies and gentlemen, I have no doubt telling you that this is actually cranberry applesauce.
DO NOT peel your apples! Most of the fiber from an apple is in the skin and you don't want to deprive yourself of extra nutrients (especially on Thanksgiving ;))!
8 large apples chopped (I used organic Gala, Honeycrisp are also great)
2 c cranberries
1/2 c water
In a large stock pot. Add in the apple and cranberries. Juice the orange over the fruit and throw the rind into the pot. Add the water. Cook on low heat for about 30 minutes until the apples and cranberries are mushy. Stir occasionally. Let cool for about 10 minutes. Carefully pour the contents into a blender or food processor and blend to your desired consistency (see note).
Note: I chose not to blend my sauce much at all because I still wanted some whole cranberries for more texture. You may also add in some cinnamon or vanilla extract if you like.
