Spicy Pumpkin Coconut Soup (Paleo)

I love anything spicy! Sriracha, pepper flakes, salsa...I WANT IT ALL. Adding spices into your diet can actually help you feel more satisfied, not having to each such a large serving. Spice also gives more flavor to your dishes, making it clear that eating healthier does not mean you have to sacrifice taste and satisfaction.
This recipe uses a crock pot. I recently fell in love with mine because it is the ultimate machine for the person who does not like to cook or slave over the stove for three hours. All you have to do is prep the ingredients, shove them in the pot, and turn it on. Slow cooking also creates bolder flavors, not drying out or burning what you're trying to cook. It's ideal for meats, soups, stews, but can be used to make so many other delicious concoctions!
Ingredients
4 c pumpkin purée (I made my own, but Libby's Organic or Trader Joe's work)
1 can no salt added chicken broth
1 can coconut milk
3 cloves minced garlic
1 c chopped onion
1 tsp apple pie spice
1 tsp red pepper flakes (omit if you don't like spicy)
Directions
Put all ingredients in crockpot and cook on low for 8 hours. Serve in bowls topped with greek yogurt or goat cheese and pepitas. You may also choose to brown the onions in a skillet first before adding them, but I didn't.
