Spaghetti with Zucchini Noodles

If you want to enjoy spaghetti without all of the over-processed flours and carbs, this recipe is for you. The zucchini is very high in water content, making you feel full like you just ate a pound of conventional spaghetti. The only difference is the nutritional value that you get from the veggies. It's a no-brainer!
Ingredients
Zucchini (one large per person)
Spiralizer
Oil (coconut or olive)
Tomato Sauce (low-sodium or homemade)
Meatballs (optional)
Directions
Prepare the zoodles with the Spiralizer and set aside in large bowl. In a large skillet, heat up some oil until it appears shiny in your pan (this is how you know it's hot enough...according to my mom). Add in the zucchini and cook until desired texture is reached, periodically tossing with large wooden spoons or spatulas to ensure the veggie noodles cook evenly. You will notice that during the cooking process, there will be some water from the zucchini in the bottom of the pan. DON'T PANIC, it will not be soggy as long as you do this next step. Before adding sauce, drain the noodles in a colander. Transfer noodles into large bowls for serving. Spoon on some warm tomato sauce and meatballs and you have yourself a romantic, Italian dinner (even if you're alone).
