Paleo Chocolate Chip Cookies

With the weather getting warmer, that means graduation parties, cookouts...
Especially when you are trying to stay healthy, going to parties such as these can be tempting to go on an all-out binge of cheeseburgers, dip and chips, ice cream...we've all been there! Sometimes it's easier when you bring something that you know you will eat, especially because you know the ingredients that are in the recipe.
This recipe is great for all kinds of people because it is paleo, gluten free, has no refined sugar, but tastes like you got them from a decadent local bakery...I won't tell!
Ingredients
2 c almond meal
1/2 c coconut flour
2 tsp baking soda
1/4 tsp salt
1/2 c coconut oil
1 1/2 c raw cane sugar
1/2 c cashew butter
2 tsp vanilla extract
2 eggs
1 c dark chocolate chips (Ghiradelli is great)
Directions
Preheat oven to 350 F. Place two pieces of parchment paper onto two baking sheets and set aside. Sift the dry ingredients using a flour sifter into a large mixing bowl. In an electric mixer, beat the coconut oil and sugar until creamy. Next, add in the cashew butter and vanilla extract and mix until combined. Add in the eggs and combine. Add the sifted dry ingredients into the wet ingredients and mix until there are no lumps of flour present. Fold in the chocolate chips using a spatula. Using a cookie scoop (2 tbsp-sized), spoon out 12 balls onto each cookie sheet. Press down on each cookie until about 3" in diameter. Bake each sheet for 8-10 minutes or until golden brown on the bottom. Let cool on rack or feel free to eat them warm and gooey :)
