Mango Salsa
Something my dad is famous for other than being my Einstein engineer is his ability to make mango salsa. This dish can be served alone, inside a fish taco, on top of grilled chicken, etc. It's really fresh tasting and you can adjust the spice factor depending on who's at your table. If you cannot get your hands on fresh mango, you can substitute with pineapple or peach.
Ingredients
1 mango
1 jalapeño (with or without seeds depending on how spicy you want it)
1 small red onion
1 red bell pepper
2 cloves minced garlic
1 tsp cayenne
1 tsp chili powder
1/4 c chopped cilantro
Juice of 2 limes
Salt and Pepper
Directions
Chop all fruit and vegetable ingredients and add to a large mixing bowl. Add cilantro, spices, and lime juice. Mix well.
Note: This last for about 4-5 days in the refrigerator, if it lasts that long.
