Greek Inspired Broccoli & Feta Salad

Do you ever have that moment when you open your fridge, wanting to eat something green and fresh and THERE'S NOTHING! You're thinking to yourself...I just went grocery shopping and spent $100, how can I have no food?! Well I'm here to tell you that it happens to everyone.
But what is one to do when you have no seemingly fresh ingredients? Go shopping again? No, not for this recipe.
I used ingredients that I already had in my freezer and canned goods from my pantry to whip this up. It's great to make ahead on a weekend day to use as a protein-rich vegetable side in your lunches! You can even have it alone as a meal if you like.
The broccoli provides you with more than a day's worth of Vitamin C and K while the garbanzos are packed full of protein.
Vegan and gluten free too!
Ingredients
1 bag of frozen broccoli florets, steamed
1 can garbanzo beans, rinsed and drained
2/3 c finely chopped red onion
1 1/2 c frozen peas, steamed
1/4 c light feta cheese
1/4 c fresh chopped basil or leftover spinach
1/3 c chopped mixed nuts
Zest of one lemon
Juice of one lemon
1 clove garlic, minced
6 tbs olive oil
1 tbsp stone ground mustard
1 tsp raw honey
Salt and pepper to taste
Directions
In a large mixing bowl, combine the broccoli, beans, onion, peas, basil, cheese, and nuts. In a small mixing bowl, whisk together the dressing ingredients with a fork. Pour onto the veggies and toss to combine. Transfer to airtight plastic container and refrigerate.
