Grain-Free English Muffin
Everybody knows it. English muffins have superpowers. Toasted with peanut butter used to make any tears in my household go away in just one bite. In the search for a healthier version, I created this one that can be done in the microwave. Yes, amen to that machine. This muffin can be made at any meal or even set aside to put in the freezer for meals on-the-go.
Ingredients
1 egg
1 tbsp coconut flour
1 tbsp ground flax seed
1 tbsp almond milk or other desired milk
1 tsp coconut oil (or whatever you like)
1/8 tsp baking powder
Pinch of salt
Directions
Mix all ingredients together in small ceramic bowl to form a biscuit shape. Microwave on high for about 2 minutes. Let cool. Then, slice with serrated knife and toast!
