Coconut Water Brownies

You could say I've been on a quest for the perfect flourless brownie. I may or may not have reached a gold medal on this one. It's flourless and has 1/4 c of honey in the entire recipe! The recipe is packed with good-for-you ingredients like banana and COCONUT WATER. Yes.

Coconut water has gotten a lot of good press lately for being Mother Nature's gatorade. It's known to be a great hydrator post-workout because it has a great source of electrolytes. Did you know it actually is good to bake with?!

In this recipe particularly, the coconut water brings out the richness of the cocoa, making the brownie taste like grandma's fudge without all of the margarine and marshmallow fluff.

Ingredients 
1 1/4 c chocolate peanut powder (PB2 is a great option)
1/2 c raw cocoa powder
1/2 c coconut water 
1 egg
1 egg white
1/4 c raw honey
1 mashed banana
2 tsp vanilla extract
1 tsp baking soda 
1/4 tsp salt  
Optional add-ins: dark chocolate chips, coconut flakes, nuts, dried fruit 

Directions 
Preheat oven to 325 F. Grease an 8x8 inch pan with oil and set aside. Beat the egg and egg white until frothy in a small bowl. In another bowl, sift together the dry ingredients: peanut powder, cocoa powder, baking soda, salt. Add in the egg mixture to the sifted dry ingredients and combine with a spatula. Add in the vanilla, honey, mashed banana and stir together. Add in the water and mix until there are no more lumps. Pour into the greased pan and bake for 25-30 minutes. Let cool and enjoy!
