Citrus Kale Salad

Wow. Shocker. Laura loves kale. You should too.
I love to cook with kale because it's a green that is loaded with vitamins, compared to romaine and iceberg lettuce. Many people complain that kale is just too tough to chew and has no taste. One piece of advise I would give is to chop the kale into smaller pieces, or steam it for a few minutes in the microwave. Some people even say you can massage the kale, yes massage, to break down some of the fibers.
Here, I paired the greens with some sweet fruits like valencia oranges and beets! The sesame oil also pairs well with the citrus, but feel free to use coconut or olive oil.
Ingredients
2 c finely chopped kale
3 beets
1 valencia orange
2 hard boiled eggs
3 tbsp balsamic vinegar
1 tbsp rice vinegar
1 tbsp sesame oil
Juice of 1/4 lemon
Pepper
Nutritional Yeast
Directions
Chop all eggs, fruits, and veggies and transfer to salad bowl. Add the vinaigrette ingredients and toss. Sprinkle pepper and nutritional yeast on top.
