Chocolate Cherry Protein Doughnuts

I was inspired to make this recipe because I wanted to experiment more with protein powder and making post-workout snacks. If you don't have a doughnut pan, you can always make muffins out of this recipe.
Makes about 24 mini doughnuts
Ingredients
1/3 c coconut flour
1/4 c vanilla protein powder
1/3 c stevia
1/3 light coconut milk
2 egg whites
1 egg
2 tbsp unsweetened applesauce
1/2 vanilla bean
1 tsp baking powder
1/4 tsp salt
1/4 c chopped dark chocolate
1/4 c dried cherries
Directions
Preheat oven to 350 degrees F. Grease a mini doughnut pan with coconut oil and set aside. Beat egg and egg whites in a large mixing bowl. Add in the rest of the wet ingredients stevia, coconut milk, applesauce) and mix well. In another bowl, combine the dry ingredients (except the dark chocolate and cherries) and mix well. Combine the dry ingredients into the wet ingredients, pouring a little bit at a time and mixing. Once the batter is well combined, fold in the dark chocolate and cherries using a large spatula. Carefully spoon out batter into the pan, making sure each is even. Bake for 12 to 15 minutes.
